Vegan Avocado Ice Cream Recipe

At first, know that this is a simple, sugar-free and even low-carb option for you to eat without guilt, right?

INGREDIENTS:

  • 1 large avocado;
  • ½ lemon;
  • 6.7 oz coconut milk;
  • 2 tablespoons of stevia, xylitol or erythritol sweetener.

WAY OF PREPARING:

First, cut the avocado in half.

Then remove the pit and use a spoon to remove all the pulp.

Then transfer it to a blender.

Now add the coconut milk, sugar and lemon.

Just beat everything until it forms a very homogeneous cream, understand?

Then transfer to a container, seal with cling film and cover with a lid.

Now just put it in the freezer.

So when the vegan ice cream starts to firm up, it’s time to transfer it and blend it with the mixer.

Beat everything until it becomes a creamy mixture and then return it to the freezer, sealing it with cling film and a lid.

However, if you don’t have a mixer, then you can skip this step, right?

Then just wait a few hours and serve your wonderful vegan passion fruit ice cream.

COMMENTS: You can add ½ cup of almond milk, this helps to add creaminess, or you can swap the coconut milk for heavy cream.
