INGREDIENTS:

  • 1 and a half cups of sweet cassava starch;
  • 1 and a half cups of sour cassava starch;
  • 2 cups of cassava;
  • ⅓ cup of extra virgin coconut oil;
  • 1 cup of hot water (from cooking);
  • Sea salt to taste.

WAY OF PREPARING:

First, cook the cassava in a pressure cooker.

Then, mash the cassava until it turns into a puree, separating it afterwards.

Now in a bowl, place the sweet cassava starch, the sour cassava starch, the oil, the salt and the hot cooking water and mix well.

It is very important to blanch the cassava starch beforehand.

That’s why it’s always better to add the hot water first, and then the cassava, right? 😉

Then add the cassava puree and stir everything until you get a very uniform mass.

Now set the dough aside to cool slightly.

Let’s then cut the dough and make the balls the size you prefer.

Then we will preheat the dough in the oven to 356°F.

Separating the balls into a round shape and placing them in a preheated oven at 356°F for approximately 25 minutes.
