Vegan Carrot Cake with Chocolate Sauce

Know in advance that vegan carrot cake is usually one of the main attractions during breakfast or afternoon snack.

This is because it is perfect for serving for breakfast, tea and even juices.

It is a very versatile recipe that harmonizes well with different flavors.

Dough ingredients:

  • 3 pieces of carrots in strips;
  • 3 cups of almond flour;
  • 1 ½ cups of stevia, erythritol or xylitol;
  • ½ cup of extra virgin coconut oil;
  • 1 tablespoon of chemical baking powder;
  • ¾ cup of water.

Ingredients for topping:

  • ½ cup of 100% cocoa powder;
  • ½ tablespoon of extra virgin coconut oil;
  • 1/3 cup of stevia, xylitol or erythritol;
  • 1/3 cup of water.

How to prepare the dough:

Firstly preheat the oven to 356 Fahrenheit on medium temperature.

Then grease a pan, measuring approximately 7.8 x 11.8 inches, with a thin layer of coconut oil and flour.

Reserve.

Now wash, peel and grate the carrot finely and transfer to the blender.

This is because the carrot mixes better with the dough.

Then add the sweetener, water and coconut oil.

This time it’s time to beat the mixture well for a few minutes, until it becomes quite smooth and homogeneous.

Then remove the mixture from the blender and transfer it to a large bowl.

Just add the flour little by little, stirring constantly and gently.

Then add the yeast and mix gently.

Finally, just transfer the dough to the pan and bake in the preheated oven for around 40 minutes or until baked.

Removing from the oven and letting it cool.

Meanwhile prepare the topping.

How to prepare the topping:

First, place a small pan over medium heat with the cocoa, sweetener, coconut oil and water.

Then stir well with a wire whisk until it boils.

Now that it has boiled, continue stirring for about 5 minutes, until the syrup thickens and starts to come away from the bottom of the pan.

Finally, just turn off the heat and drizzle the hot chocolate syrup over the cold cake.

Serve next.
