INGREDIENTS:

  • 2 tablespoons of 100% cocoa powder;
  • 1 cup of coconut milk;
  • 1 tablespoon of cornstarch;
  • 3 tablespoons of sweetener xylitol, stevia or erythritol;
  • ½ teaspoon of emulsifier;
  • 3 tablespoons of water.

WAY OF PREPARING:

First, combine the cornstarch and water in a bowl.

Then mix well and set aside.

Now place the coconut milk, sweetener and cocoa powder in a pan and heat over medium heat.

Mix and let it boil.

Once it is boiling, lower the heat on the pan and add the cornstarch, mixed with the water.

Now let it mix until the dough starts to thicken and then turn off the heat.

Wait for it to cool down.

When the mixture is cold, place it in a container with a lid and leave it in the freezer for approximately 4 hours.

Until the dough starts to get very hard.

Then, remove it from the freezer and wait for it to defrost for about 10 minutes.

Now, break the ice cream into smaller pieces.

Transferring to a mixer and adding the emulsifier.

Beat the mixture at fast speed for approximately 10 minutes until it forms a fluffier cream.

Finally return the ice cream to its container, cover and place in the freezer.

Leaving it there for about 2 hours before serving.
